Coconut Curry Sauce

    Coconut Curry Sauce
    Vegan, Gluten Free
    Happily Serves 6


    1 13.5 ounce Can Coconut milk
    2 TBSP Curry paste
    1 inch piece fresh ginger or ginger powder
    2 cloves fresh garlic, coarsely chopped
    1 tsp Coconut Sugar or Monk fruit
    2 tsp Coconut Aminos

    Add all of ingredients to food processor, Puree until smooth.

    Pour over your desired dish, optional: top with Micro Greens.

    Honey Ginger Dressing

      Honey Ginger Dressing
      GF, Paleo
      Happily serves 2


      1 Tbsp Avocado Oil
      Zest of 1 lime
      2 Tbsp coriander
      1 tsp minced fresh ginger
      2 Tbsp Raw honey
      1/4 tsp black pepper
      2 Tbsp Coconut Aminos

      Mix all ingredients.
      Shake before serving.
